I have no idea why it never occurred to me to try roasting green beans while I was roasting so many other vegetables. Steamed and stir-fried green beans have been in my cooking life for decades yet I’d somehow never tried oven roasting them.

It turns out that green beans are even more amazing when oven roasted! Roasted green beans turn out with browned and crispy edges and I never can resist eating them right off the pan when they come out of the oven.

I’ve been roasting vegetables for years now, but somehow green beans were never on my list. That all changed when I finally tried it a while back. Sure enough, oven-roasted green beans blew me away.

Roasting vegetables brings out so much more flavor than other cooking methods. This time of year especially, I love the excuse to turn on the oven and enjoy my vegetables this way. As a huge bonus, roasting green beans is so easy and hands-off. You can make some of the most flavorful veggies you’ve ever tasted with hardly any effort.

My kids, who aren’t usually big vegetable fans, really enjoyed this side dish too! It’s wonderful just as it is and can be adapted with different spices and seasonings to suit your palate. You can even roast some green beans for Green Bean Gratin.

Baked Green Beans

Because green beans are thin, they cook in the oven in no time. These took under 15 minutes! If you’re like me and you’ve never roasted green beans before, you’re going to love how simple it is.

You’ll need the following ingredients to make this recipe:

  • fresh green beans
  • olive oil
  • kosher salt
  • freshly ground black pepper

These roasted vegetables are delicious with just the simple seasoning of salt and pepper. I love the taste of the green beans shining through without a ton of seasonings taking over. However, it can be fun to experiment with other spices like crushed red pepper, garlic powder, or lemon pepper.

How Long to Roast Green Beans

The most time-consuming part of this recipe would be washing and trimming the green beans. To make this step easier, you can buy pre-washed and trimmed green beans from the produce section of most grocery stores. The price point might be slightly higher than buying them uncut, but it could be worth it if you’re in a crunch at dinner time, (or hate vegetable trimming!)

Most nights, however, I don’t mind a quick rinse, dry and trim! It only takes a couple of minutes, especially if you use a towel to pat the green beans dry after rinsing.

Drizzle your green beans with olive oil, then sprinkle liberally with salt and pepper. Spread the green beans across a baking sheet and roast at 400 degrees for 12 to 15 minutes or until the beans are bright green and tender.

Don’t forget to stir the beans about halfway through cooking! Remove from the oven and serve hot.

  • Want to make vegetables more enticing to kids? These beans taste great with a bit of fresh Parmesan or Pecorino cheese grated on top after cooking!
  • Leftovers store well in the fridge for a couple of days (covered tightly). They’re good reheated and can also be enjoyed cold in salads of all kinds!

Prevent your screen from going dark

  • Preheat the oven to 400°F. Rinse the green beans and pat dry. Place them on a large baking sheet and drizzle with olive oil. Sprinkle liberally with salt and pepper and toss to coat.

  • Spread the green beans across the baking sheet and roast for about 12-15 minutes. They are ready to eat when they are bright green and crisp tender.

If you like your green beans extra crispy (like we do) add an additional 10 minutes to the cooking time!
