Cosmic Brownie Ice Cream

I’ve been on a kick lately making Little Debbie copycat ice cream recipes. When I first spied Little Debbie’s line of ice creams in the grocery store, I did a double take. And then I immediately put them all on my must-try-soon list.

Little Debbie’s brownies were always a fun treat growing up and I couldn’t resist turning that nostalgic treat into a bowl of ice cream. I started this ice cream by playing with a copycat recipe for those brownies.

We absolutely love these ultra fudgy brownies topped with a layer of fudge frosting and a sprinkling of candies, but if you aren’t in the mood to bake? Just grab a box of Little Debbie’s brownies and you’ll be churning ice cream in no time at all.

Little Debbie Ice Cream

You know how much I love trying new flavors of ice cream and recreating them at home. Check out my son’s favorite Nutty Bars Ice Cream for the first Little Debbie inspired ice cream we made.

This Cosmic Brownie Ice Cream has been a huge hit. We all tried the store-bought ice cream and weren’t big fans of it. Our version has a richer chocolate flavor with significantly better chunks of brownies throughout. I’m willing to bet you’re going to love it too!

Oatmeal Cream Pie Ice Cream is another copycat ice cream recipe. It’s a creamy vanilla ice cream with hints of brown sugar and cinnamon that is generously filled with pieces of oatmeal cream pie cookies. Our friend Jeff went a little crazy over this one. The chewy cookies are just fantastic in the ice cream here.

Cosmic Brownies Ice Cream

You’ll need the following ingredients to make this recipe:

  • cocoa powder
  • sugar
  • kosher salt
  • heavy cream
  • semi-sweet chocolate chips
  • milk
  • vanilla extract
  • Cosmic Brownies (homemade or store-bought)
  • miniature M&Ms

To make this ice cream, combine the cocoa, sugar, and salt in a large saucepan. Add the cream and whisk to combine. Bring to a simmer over medium heat, stirring continually, until it comes together and begins to steam and simmer.

If you wish, you may increase the heat, but continue stirring non-stop. Do not step away at this point.

Remove from the heat and immediately add the chocolate. Whisk until the chocolate has completely melted. Stir in the milk and vanilla.

Cool and refrigerate the mixture for at least 4 hours or overnight until completely cold. When ready to churn the ice cream, process according to your machine’s instructions.

When the ice cream finishes churning, transfer about a third of it to a freezer-safe container, scatter brownie pieces over each layer of ice cream, and sprinkle with candy. Repeat the layers twice more.

Cover with a lid and freeze until ready to serve. Scoop into bowls and serve over these brownies or with additional brownie chunks, if desired.

Chocolate Fudge Brownie Ice Cream

Chewy chunks of brownies are some of my favorite ice cream add-ins. They stay soft enough to chew while retaining much of their texture in the frozen ice cream.

If you can imagine your favorite homemade brownies transformed into a smooth and creamy bowl of ice cream, then you have a glimpse of the awesomeness that is this Brownie Ice Cream. (There are brownies churned into the ice cream base in addition to the optional chunks scattered throughout the ice cream!)
